From being woken in the middle of the night with a “revelation” to start a waffle business, not having had any business experience before that, Jas and husband Gil have created a successful business that now attracts people from all over Sydney. Customers drive – and cycle – from as far away as The Shire, Northern Beaches, North Shore to enjoy their amazing gourmet coffee, loving customer service, and waffles, pancakes, crepes and other yummy savoury and sweet menu items. May is the month we celebrate that journey. So, come on down and make sure you wish the team Happy Birthday!

May is the month when Jas My Waffles blows out the candles and celebrates our birthday. Not only is it the business’ birthday…on May 25th it is also founder Jas DeLeon’s birthday!!! So, when you come in to the shop this month make sure you say a big happy birthday to Jas and Gil and the team. We have been at Rooty Hill for three years now and our clientele keeps growing and growing. If you’re here on the weekend you’ll see all those cyclists who come from all over Sydney for a “pit stop”. We have regulars who come every day…twice a day…up to 4x a day.

Here’s an amazing fact about Jas My Waffles…customers drive up to an hour to visit us and enjoy our gourmet coffee and yummy food. True. We have customers from the Northern Beaches, the Shire, the North Shore, the Macarthur region…all travelling to Rooty Hill for a memorable break and time with friends. We want to recognise and reward those who travel the furthest so next time you come in let us know the name of your suburb. And, at the end of each month, we will send a “thank you” gift to those people who would (in the words of that Eighties song) walk for 1,000 miles.

Did you know our champion barista Gil DeLeon, co-owner of Jas My Waffles, is in training for the next Danes Grand Barista Championship. He made it into the top 10 two years ago and this time wants to make it to the top. Wouldn’t it be great for Western Sydney to have the nation’s top barista! Now he has his brand new Rocket coffee machine – Jas My Waffles were the first coffee shop in Australia to order the shiny chrome latest and greatest from Giotto in Italy (!) – and is perfecting the art of 3…that’s right…THREE latte art drawings on each cup of coffee. You can help Gil hone his skills by coming over to Jas My Waffles and asking for a delicious Danes Gourmet Coffee. This can be your contribution to his preparations.

New Times At Rooty Hill…

We open earlier now due to the huge demand for early risers to have their first coffee of the day at Jas My Waffles (while on the way to the office, the train or bus).

Mon to Fri we are now open from 6AM…and close at 6PM.

On weekends we are open from 7AM – 5PM on Saturdays and 7AM-1PM on Sundays.

Plenty of time to enjoy our gourmet coffee…our one and only Waffle On A Stick…sweet and savoury waffles, pancakes, crepes, churros and more.
